Grandma's Blintzes

Pancakes
3 eggs
drop salt
1 cup flour
1 1/4 cup milk
Cheese Filling
2 eggs
1/4 cup sugar
1 1/2 lbs pot cheese (in New England, they call it farmers cheese)
drop salt
Instructions
Beat eggs, mix in salt, flour and milk until batter is smooth. Cream together the pot cheese, eggs and sugar until the mixture is smooth and creamy. Scoop a spoonful into the pancake, roll and tuck the edges in well. Fry blintz in plenty of butter until they are golden brown.
What she left out was...
After you mix the pancake batter, drop spoonfuls into a frying pan and fry only on one side.
Make a stack of pancakes cooked on one side.
Make the cheese mixture. Spoon that into the middle of the fried side of the pancake.
Roll and tuck pancake around cheese and use a bit of egg white to keep the whole thing closed.
Then fry it in plenty of butter.
