Spicy Granola

Source:

A cumin and cayene spiced granola. This variety is lower in sugar and fat. Lots of nuts and seeds. Just plain good.

 

~3 cups quick cook oats

~1.5 cups nuts (pecans/almonds/peanuts)

~1/2 cup roasted salted sunflower seeds

~1/2 cup ground flax seed

~1 teaspoon coarse salt

~1 tablespoon cinnamon

~1 tablespoon cumin

~1 teaspoon cayenne

~2 egg whites

~3/8 cup brown rice syrup

~1/4 cup extra virgin olive oil

~1 cup raisins / craisens

 

1. In a medium bowl, combine the dry ingredients (except raisins) with a spatula.

2. Mix the liquid ingredients in a large measuring cup.

3. Combine and stir, stir, stir.

4. Spread onto parchment paper on a large baking sheet.

5. Bake for 20 min at 300 degrees.

6. Stir enough to break up large clumps.

7. Bake 10-12 more minutes. Be careful not to burn. Granola goes from "perfect" to "burnt" in the blink of an eye.

8. Remove from oven and let cool. Add raisins.

9. For a dessert granola, add chopped dark chocolate chips sparingly when the granola is mostly cooled and let sit until completely cool.
